We love the fresh, bright, floral taste of the original, but we add a bit of good old-fashioned American bourbon or rye whiskey and omit the fruit. It still re- freshes, but it puts you in a good mood faster. Just don't serve it to your thoroughbred or your jockey until after the race. INGREDIENTS 1.5 oz. Pimm's No. 1 Cup 1 oz. whiskey (bourbon or rye) 1 oz. fresh lime juice 0.25 oz. simple syrup (adjust to taste) 4-5 slices of cucumber 4-5 fresh mint leaves, plus extra for garnish Soda water Ice INSTRUCTIONS In the bottom of a cock- tail shaker, muddle the cucumber slices and mint leaves gently to re- lease their flavors. Add Pimm's No. 1 Cup, whiskey, fresh lime juice, and simple syrup to the shaker. Fill the shaker with ice and shake well until chilled. Strain the mixture into a glass filled with fresh ice cubes. Top off with soda water. Stir gently to combine. Garnish with a cucumber slice, sprig of mint, and a wheel of lime or cucumber for extra appeal. INGREDIENTS 4 cups shredded cabbage (green or a mix of green and purple) 1 carrot, grated 1/4 cup Greek yogurt 2 tablespoons apple cider vinegar 1 tablespoon honey 1 tablespoon Dijon mustard 2 tablespoons olive oil 1 clove garlic, minced Salt and pepper to taste Optional: chopped fresh herbs such as parsley, dill, or cilantro for garnish INSTRUCTIONS Mix the shredded cabbage and grated carrot together in a mixing bowl. In another bowl, combine the Greek yogurt, apple ci- der vinegar, honey, Dijon mustard, olive oil, minced garlic, salt, and pepper. Pour over the coleslaw mix- ture and toss until coated evenly. Taste and adjust seasoning if necessary, adding more salt, pepper, or vinegar according to your preference. Cover the coleslaw and refrigerate for at least 30 min- utes before serving. Just before serving, give the coleslaw a final toss and garnish with chopped fresh cilantro. THE MARCUS DALY REFRESHES, AND PUTS YOU IN A GOOD MOOD FASTER THAN A RACEHORSE
